I made a Bruschetta Appetizer this past weekend while my fiance was cooking some other good stuff (Pics to follow). Here is my favorite recipe for Bruschetta:
Bruschetta
You Will Need:
6 or 7 Ripe Plum Tomatoes
2 Cloves Garlic, Minced
1 Tbsp. Extra Virgin Olive Oil
1 Tsp. Balsamic Vinegar
6 - 8 Fresh Basil Leaves, Chopped
Salt and Pepper, To Taste
1 Baguette (Or I Use Fresh Garlic Parmesan Sour Dough from West Side Market in Cleveland)
Olive Oil for Toasting Bread
Preparation:
For the Bruschetta, Slice the tomatoes, remove the seeds and dice them finely. Add all the remaining ingredients and mix well. This tastes best if you make it before hand and let the flavors sit together. Also, I like to add a little handful of parmesan cheese.
For the bread, you can either bast them with olive oil and put them on a baking sheet for about 12 minutes (425*) or until golden brown. Or my fiance suggested throwing them on the panini grill for a couple minutes.
When plating, I like to sprinkle parmesan cheese and add a slice of avocado on top.
